Faces of India – 307 How to make Kachori?
Faces of India
a series through which I intend to portray the various characters of my country whom I met during my travels. I bring back souvenirs, frozen moments from my travels, why not some memories of people I have met and interacted during the travels. Faces of India is a weekly series in my blog since MARCH 2011. Population of Bikaner is around 6lakhs plus. Can you guess how many kachoris are made in this city for this population everyday?
Kachori – (in Indian cooking) a puri (flat bread deep fried in oil) stuffed with spiced lentils, potato, or beans.
Kachoris are one of the most popular food items of Bikaner Rajasthan. I saw locals, their families flocking around food stalls to buy this popular snack. Various spices are used in the stuffing that go into the making of Kachori. During my road trip from Bikaner to Jaipur we halted at a road side stall. And here I saw how Bikaneri Kachori are made.
I intended to take picture of the vendor for my faces of India series, instead ended up taking picture of food of India. That is the power of food, it make s you forget your goals! I did have a crisp hot kachori with ginger tea, the combination was heavenly. There is no denying the fact that this lip-smacking snack/food is a prime feature of the culture of Bikaner.
So? Could you guess how many kachori are made in this city every day? It is approximately 4lakhs I was told.
Here is a moong dal kachori recipe – Moong Dal Kachori by Tarla Dalal.
